Makes enough for 10 people
Ingredients for the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Drink (makes 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Combine every ingredients in a saucepan, heat until it reaches a light boil, mixing until the sugar dissolves. Then, take off the burner and let it to cool down fully. Decant to a clean bottle, seal and store in the refrigerator, where it will keep for about four weeks.
To make Batch Mix: Combine every liquid ingredients into one big jug, let it rest for an hour, then pass it through , ideally through a fine cloth, to ensure it's perfectly clear.
When ready to serve: Measure 85ml of your premix into a mixing glass filled with ice, and stir carefully for one minute until cold. Pour to a frosted cocktail glass or a similar vessel, top with the cranberries adding the final touch using a light spray with the mandarin essence over the drink.
